The four newcomers have obtained a Michelin star.

This year’s Michelin star list better reflects a food scene emerging from the pandemic restrictions that have hit the segment particularly hard. The list was not released in 2020, and in 2021 previous winners remained on the list, even though they were temporarily closed.

Four Chicago restaurants that closed permanently were removed from the list this year (Acadia, Entente, Spiaggia and Yugen). Parachute at Avondale is being kept without designation due to an extended temporary closure, in accordance with Michelin policy, a spokesperson said. The restaurant remains closed for indoor dining, but is shipping dinner kits nationwide via Goldbelly.

Michelin continued to consider changes restaurants have made to their business models to adapt to COVID, the spokesperson said. Newcomers opened amid and, in some cases, despite the pandemic. Kasama opened in 2020, offering pickup only, and just launched its tasting menu slated for November.

“Michelin Guide inspectors have found that Chicago restaurant chefs and teams consistently maintain a high level of quality and creativity in dining experiences, even as keeping them in business has been an unprecedented challenge over the past year. ‘past year,’ Gwendal Poullennec, international director of the Michelin Guides, said in a press release.

The Michelin guides were created more than a century ago by French tire manufacturers. The coveted Michelin stars have been considered the crown jewels of the restaurant industry.

Last year, 24 Chicago restaurants were named to the list. The famed Alinea in Lincoln Park (which has spawned other Michelin star recipients) remains Chicago’s only restaurant with a coveted three star. Four restaurants were awarded two stars this year.

Michelin also recently released its Bib Gourmand list, which this year includes 55 Chicago restaurants that the company says serve high-quality cuisine and allow diners to get two courses and a glass of wine or dessert for $40. . That’s down from 58 last year. It has seven newcomers this year, including Apolonia in the South Loop, Bloom Plant Based Kitchen in Wicker Park and Dear Margaret in Lakeview.

Michelin also awarded two special prizes this year. The sommelier of the year was awarded to Colin Hofer, director of wines for the Bonhomme group, for his work in Porto. The prize for exceptional cocktails was awarded to Julia Momosé, mixologist at Kumiko.
